Flapjack

Ah brown sugar how come you taste so good…
We have been invited to a potluck monthly gathering. Apparently everyone brings a dish of their choice and the crowd is very multicultural, so people try and bring something from their own country. We had been told the kitchen is always a busy place and so if we could bring something that didn’t require an oven or microwave it would be highly appreciated.
I thought of my sweet teeth (all 28 of them) and decided scones were the way forward. But as it’s not just me (Jason will also be going), we need two dishes. And what better dessert to accompany scones could there possibly be than that simple snack: flapjack. They are ridiculously sweet and unhealthy, but I am sure oats and honey are good for you, so basically that must cancel out all the fat and sugar, right?
You will need:
250g butter
60g brown sugar
Pinch of salt
3 generous tablespoons of honey
400g oats
First of all, stick on the oven at 180°C. Then melt the butter in a saucepan. Once it turns into a liquid, take it off the heat, add the sugar, salt, honey and oats and mix well.
Then place this into a lined baking tray of your choice. Place it into the oven for 30 minutes. Once you take it out, let it cool for 10 minutes and then lightly cut lines into the block (as in the below photo) so you can break it into pieces easily later. Leave it to cool and enjoy with a cup of English tea. Super simple and a great snack. I hope everyone enjoys it as much as I shall! 🙂
