Christmas Cookie Time!

Oh Christmas Tree, Oh Christmas Tree…

Even though we are in England, we brought a little bit of Berlin with us!

No Christmas would be complete without Christmas biscuits. We made a lot of them and here is what we did:

You will need:
100g sugar
100g butter
275g flour
1 egg
You put everything into a bowl and mix like crazy. Then my trick is to put the mixture into the fridge for half an hour to cool it down, as when you touch the mixture you are warming it up and this makes it sticky and hard to use. Next, put flour on your hands, the rolling pin and the surface you are going to put the mixture on and roll out the dough to just under half a centimetre. Cut out some shapes you like and bake them for about 9 minutes on Gas Mark 5. When they start to go brown take them out, otherwise you will lose the nice white colour of the biscuits.
When I was little, instead of using water with icing sugar to make icing, we would use freshly squeezed lemon juice. It made the icing actually taste good! When we were away in Dresden a couple of weeks ago I had forgotten to buy lemons. Luckily we had oranges on hand from large amounts of mulled wine making, so I used that. I would like to patent this amazing idea, especially for Christmas, as it gives the biscuits a festive flavour and makes the kitchen smell amazing. Mix that with food colouring and decorate as you wish. Let them dry thoroughly and put away any you haven’t eaten yet.
