Yakisoba

photo 1I’m a quivering emotional wreck when it comes to cutting onions, however today I tried it with my glasses on to a much higher success rate. My eyes are stinging, but there was no use for tissues… I recommend wearing spectacles of some sort if you suffer from the same problem.
Anyway, to making the food! Yakisoba means fried noodles in Japanese. Popular as a fast food dish, here is how to do it:
You will need:
2 onions
¼ cabbage
2 packets of yakisoba noodles
Whatever else you happen to have.
This is a great dish to use up leftovers. We had a load of sausages (yeah, we live in Germany!) and my Japanese grandmother always talks about adding colour to your food, so instead of going red and orange with peppers and carrots (yuck), we went yellow with corn (yum!). You can adapt the method to what you have.
photo 2I fried the onions and cabbage whilst boiling the yakisoba on the next hob. Next the sausages and corn went into the onion and cabbage pan to be fried for a few minutes. Then add the drained noodles and mix together with the packet of spices you are given in the packet. I like to add a bit of honey to sweeten it all (don’t tell my grandmother) and pepper, as you can never have too much pepper. If you like the Japanese pickled red ginger you can put that on the top with some seaweed. I do not like the ginger and we don’t have any seaweed sadly, so ours went without toppings. But it was served with love.
This amount will make a lot of food – I hope you are hungry! And if not, invite me over to eat!
